Segovia is beautiful, highly recommended. In Toledo I have not been long enough to say, but I've also heard good things.
A very nice place is the Fageda d'en Jorda. It's in the Garrotxa near a volcanic area, is like going walking in Fable
Granada and Salamanca are lovely
